Ingredients
  1. 150 g oat flour
  2. 2 egg whites or 80 g liquid egg whites
  3. 15 g cinnamon, coriander, nutmeg, anise
  4. grated zest of 1 orange
  5. 100 ml water
  6. 30-50 g stevia or to taste your favorite sweetener
  7. 15 g honey or agave syrup
  8. 5 g baking ammonia
  9. 40 g shelled walnuts
  10. 50 g sugar free dried apricots, chopped (optional)
  11. To taste granular sweetener to sprinkle
Instructions
  1. 1 In a medium bowl mix together orange zest, oat flour and spices.
  2. 2 In a separate pot add the stevia, the honey and the water. Melt the stevia and the sugar on a low heat. Don’t let the sugar candy, otherwise cavallucci will be too hard.
  3. 3 Combine the mix to the honey-stevia syrup. Add 100 ml water to form a smooth dough.
  4. 4 Let cool before adding the egg whites.
  5. 5 Knead the dough, make small balls and slightly flat them by pressing in the middle with your thumb.
  6. 6 Put them in a baking tray lined with baking paper and bake in a 180° C oven for about 15 minutes. Cover them with baking paper, to prevent over-browing. Cavallucci should be white and soft.
  7. 7 Let them cool completely – when hot, you can smell the ammonia. Sprinkle with granular sweetener.
Notes
  1. You can keep the cavallucci per several days closed in a tin or an airtight container.
