Ingredients
  1. 15 oz cooked pumpkin
  2. 2 cups (180 grams) oat flour, unflavoured – an idea: try with the chocolate flavoured oat flour! Yummy!
  3. 2 scoops (60 grams) vanilla whey protein
  4. ½ cup skimmed milk (or unsweetened almond milk)
  5. ½ cup xylitol [or other favorite sweetener]
  6. 4 oz applesauce or a big jar baby food applesauce
  7. 4 egg whites
  8. 2 tsp vanilla extract
  9. 2 tsp ground ginger (optional)
  10. 2 tsp ground cinnamon
  11. 1 tsp baking powder
  12. 1 tsp baking soda
  13. ½ tsp salt
  14. ½ cup chopped almond or walnuts (optional)
  15. ½ cup dried raisins (optional)
  16. ½ cup dried cranberries (optional)
Instructions
  1. Mix the pumpkin, the applesauce, sweetener, egg whites, baking powder and soda, vanilla, cinnamon and ginger in a blender.
  2. Combine oat flour, whey protein, milk. If you like, add almond or walnuts, raisins and/or cranberries.
  3. Pour batter in a silicone mold.
  4. Bake at 350° F for 20-30 minutes.
  5. Store in the refrigerator or freezer.
