High Protein, Sugar Less Pandoro

traditional Italian Christmas cake - Pandoro

This is a great recipe of a traditional Italian Christmas cake. I changed some ingredients into your favourite – oat flour (you can get the perfect Pandoro indeed!) and protein powder. You need to patient for as long as 8 hours because of the needed rising but you’ll get a delicious, nutrient-dense cake. If you don’t have a Pandoro cake, you can fold and shape a round aluminum disposable mold.

Yeast Mixture
  1. 1/4 cup warm water 60 g
  2. 1 tablespoon active dry yeast
  3. 1 tablespoon honey
  4. 1 egg yolk
  5. 1/2 cup all-purpose flour
  1. 5 cups oat flour
  2. 8 egg yolks, plus 1 egg
  3. 3/4 cup honey or to taste your favorite sweetener
  4. 3 tablespoons unsalted butter, melted
  5. 1/2 cup water
  6. ½ cup pea protein isolate, unflavored
  7. 1 lemon, zested
  8. cooking spray
  1. Whey protein powder, to taste
  1. 1 Combine the yeast mixture ingredients and cover with a towel. Let rise in a warm place for 2 hours.
  2. 2 Beat together 4 of the egg yolks, 60 g sugar or 40 g Misura con Sucralosio, the butter and 1/2 cup water. Add 150 g of the flour and the yeast mixture. Mix well. Knead for 5-10 minutes on an electric mixer (dough hook attachment). The dough is pretty liquid and tacky. Cover with plastic wrap and/or a towel and let rise in a warm place for 2 hours.
  3. 3 After 2 hours (or more, you don’t need to be strict) add the remaining 50 g flour, egg yolks, 1/2 cup water 120 ml, 50 g unflavored pea protein powder and lemon zest. Blend with a wooden spoon. Cover again plastic wrap and/or a towel and let rise in a warm place for 2 hours.
  4. 4 After the second 2-hour bout, spray a pandoro mold with Pam Cooking Spray or butter, pour the batter, cover with a towel and let rise for 1-2 hour. Fill the mold for not more than ½ because it raises a lot.
  5. 5 Preheat the oven to 375 degrees F. Bake the pandoro for 35 minutes, until a skewer inserted in the center comes out clean.
  6. 6 Sprinkle with whey protein powder. Serve.
