Chocolate Log/Yule Log

The Yule Log is a typical Christmas cake in Nothern Italy, France and in some other European countries. Do you know that you can make a delicious Yule Log with protein powders and oat flour?!

For the cake
  1. 1 tsp instant coffee granules
  2. 160 g egg whites
  3. 30 g xylitol
  4. 40 g stevia
  5. 120 g oat flour
  6. 2 tsp cocoa powder
For the filling
  1. 2 tbsp Whey protein powder, unflavoured
  2. 2 tbsp Calcium Caseinate protein powder, unflavoured
  3. OR substitute whey protein and casein protein with quark cheese, light cream cheese, ricotta, or Greek yogurt 0% fat
  4. 1-2 g Xanthan Gum
  5. water
For the chocolate icing
  1. 4 oz 70% chocolate bar, no sugar added
  2. 100 ml hot water
Instructions
  1. 1 Mix the coffee with 1 tablespoon warm water. You may prefer a cup of espresso. Your choice. Whip egg whites to stiff peaks by hand or with an electric whisk. Gently mix egg whites, coffee mix, xylitol and stevia. The mixture must be thick and airy almost like meringue.
  2. Fold in cacao and oat flour very gently.
  3. 2 Line a rectangular mold with baking paper. Pour the mixture evenly into the lined mold. Bake at 350° C for 12-15 minutes. The cake is ready when it feels spongy but firm when touched.
  4. 3 Carefully roll up the cake lengthwise from one of the short ends. The paper helps by rolling inside so that the cake doesn’t stick. Let cool – it is better if the cake is left overnight wrapped up.
  5. 4 The next day fill the cake. Mix whey protein and casein with 3-4 tbsp water. If it is too liquid, you may want to add some xanthan gum. Carefully unroll the cake. The cake may cracks – do not worry because you’ll fix it up by spreading the filling on its inside. Re-roll the cake – without the paper.
  6. 5 Cut a piece of cake, askew, and put it near the longest side of the log. It will look like a bough.
  7. 6 Chop the chocolate tablet and put the pieces in a microwave container with 100 ml water. Cook on high for 60-90 seconds or till it is melted. Let cool a bit till the chocolate is denser. Stir in and spread the chocolate icing over the cake. Use a knife to carve long lines like it were a real bark.
  8. 7 Put in the fridge till the chocolate is hard again. Decorate with some Christmas symbols – it is typical to place a sprig of holly on this cake.
